Dark Chocolate Oatmeal with Strawberries


Ingredients:

1 cup old-fashioned rolled oats

2 cups vanilla unsweetened almond milk or 0% fat milk*, or as needed

1/8 teaspoon sea salt

1/4 cup unsweetened cocoa powder

1 medium fully ripened banana, peeled and mashed

3/4 cup diced fresh strawberries

3 packets monk fruit sweetener or natural sweetener of choice, to taste

2/3 cup sliced fresh strawberries

1/4 cup 0% fat plain Greek yogurt

2 teaspoons cacao nibs

 

Instructions:

1. Stir together the oats, milk, and salt in a medium saucepan. Bring just to a boil over

medium-high heat.

 

2. Stir in the cocoa powder, mashed banana, and diced strawberries, reduce heat to

medium-low, and simmer uncovered until oats are softened, about 5 minutes. Stir in

sweetener to taste.

 

3. Transfer the oatmeal to bowls, top with the sliced strawberries, Greek yogurt, and

cacao nibs.

 

*Cow’s milk has significantly more protein than most almond milk options. If using cow’s

milk, add 1/4 teaspoon pure vanilla extract to recipe.
