Cauliflower Rice Burrito Bowls


Ingredients

1 Pound Ground Lean Beef, Turkey, or Chicken

1 Taco Seasoning Packet (Siete, Ortega, etc.)

1 Onion, diced

1 Pint Cherry Tomatoes, diced

1 Can Corn

1 Bag Shredded Lettuce

2 C Shredded Mexican Cheese

1 Bag Riced Cauliflower

 

Toppings:

Cilantro

Limes

Salsa

Avocado

 

Instructions:

1. Prepare the Cauliflower Rice: In a large skillet over medium heat, add a small amount of oil

and cook the riced cauliflower for 5-7 minutes, stirring occasionally, until tender. Set aside. (Or

follow directions on the bag.)

 

2. Cook the Meat: In the same skillet, cook the diced onion over medium heat until softened,

about 2-3 minutes. Add the ground beef, turkey, or chicken to the skillet and cook until

browned, breaking it apart as it cooks. Drain any excess grease if needed, then stir in the taco

seasoning and follow the package instructions (typically adding water and simmering for a few

minutes).

 

3. Prepare the Veggies: Dice the cherry tomatoes. Drain and rinse the canned corn.

 

4. Assemble the Burrito Bowls: Start with a base of cauliflower rice in each bowl. Add the

seasoned meat on top.Layer with shredded lettuce, diced tomatoes, and corn. Sprinkle it with

shredded Mexican cheese.

 

Add Toppings:

● Garnish with fresh cilantro.

● Squeeze fresh lime juice over the bowl.

● Add salsa and sliced avocado as desired.
