Ingredients:
3 tablespoons unsweetened applesauce
2 tablespoons chickpea or oat flour
1 small clove garlic, minced
3/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried
1/4 teaspoon minced fresh rosemary or 1/8 teaspoon dried
1/4 teaspoon ground sage
1/8 teaspoon ground nutmeg
Pinch of hot pepper flakes
8 ounces ground turkey (about 93% lean), chilled
1 1/2 tablespoons extra-virgin olive oil
Instructions:
1. In a medium bowl, stir together the applesauce, chickpea flour, garlic, salt,
pepper, thyme, rosemary, sage, nutmeg, and hot pepper flakes until well
combined. Add the chilled ground turkey and stir until evenly combined.
2. Form the sausage mixture into 8 loosely formed balls, about 2 slightly rounded
tablespoons mixture each.
3. Fully heat the olive oil in a large (12-inch) stick-resistant skillet over medium-high
heat. Add the balls and, working quickly, press using a silicone spatula into about
2 1/4-inch diameter patties.
4. Cook the sausage on both sides until well done and well browned, about 7 to 8
minutes total. Serve while warm (2 patties each as a side dish or 4 patties each as
a main dish).
