Ingredients:
3/4 cup vanilla Greek yogurt (Oikos or Chobani High Protein Yogurt)
1/2 cup pumpkin puree
1/2 teaspoon cinnamon
1/4 teaspoon pumpkin pie spice
1 teaspoon maple syrup
1 graham cracker, crumbled
Toppings:
Whipped cream
Chopped pecans
Granola
Instructions:
1. In a bowl, combine the pumpkin puree with the cinnamon, pumpkin pie spice, and half of the
maple syrup. Adjust the sweetness by adding more syrup if needed.
2. Spoon half of the pumpkin mixture into a parfait glass, filling it just under a fourth of the way.
Sprinkle a thin layer of granola or chopped pecans over the pumpkin mixture if desired.
3. In a separate bowl, mix the Greek yogurt with the remaining maple syrup, adjusting the
sweetness to taste.
4. Spoon a layer of the yogurt mixture over the pumpkin layer. Add another thin layer of pecans
or granola.
5. Top with the remaining pumpkin mixture.
6. Add a dollop of whipped cream and sprinkle with additional chopped pecans or granola as
desired.
